- 9 c. sugar
- 3 c. water
- 1 tsp. alum
- 150 good size clover blooms (red)

1. Boil sugar, water and alum about 12 minutes (rolling boil). Turn off heat.
2. Press clover blooms in hot syrup.
3. Let stand 20 to 30 minutes.
4. Strain in cheesecloth after removing clover blooms. Pour in jars.
