Fresh Apple Pound Cake

- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 1 tsp. vanilla
- 3 c. fresh apples, grated
- 3 c. plain flour
- 1 tsp. baking soda
- 1 tsp. salt

1. Mix sugar and oil together.
2. Add eggs, one at a time, beating after each addition.
3. Combine flour, baking soda and salt.
4. Blend into sugar mixture, one cup at a time.
5. Stir in apples and vanilla. Pour into greased and floured tube cake pan and bake at 350° for 1 hour.
