- 1/2 c. butter or margarine
- 1 1/2 c. sugar
- 1 1/2 c. brown sugar
- 4 eggs
- 1 tsp. vanilla
- 1 (18 oz.) jar chunky peanut butter
- 2 1/2 tsp. baking soda
- 1 (18 oz.) box oats
- 6 to 10 oz. shredded coconut

1. In a large mixing bowl beat butter and sugars.
2. Add eggs and vanilla; mix well.
3. Add peanut butter and mix well.
4. Combine baking soda with oats and add to mixture; mix well.
5. Add coconut, mixing all ingredients together well.
6. Form dough into balls about the size of a walnut.
7. Place on ungreased cookie sheet, flatten each cookie with a fork or fingers.
8. Bake at 325° for 10 to 12 minutes. Cool on pan for 2 minutes.
9. Remove cookies to wire rack.
10. Store in tightly covered container.
11. Will freeze well.
12. Yields approximately 50 cookies.
