1. Combine flour, soda, cinnamon and salt in a bowl.
2. Mix the remaining ingredients together and combine with the dry ingredients.
3. Mix thoroughly.
4. Add 3 cups grated carrots.
5. Bake in two 9-inch or three 8-inch pans at 350° for 30 to 40 minutes. Frost with cream cheese frosting.
