7 Layer Mexican Pie

- 1 can refried beans
- 1 jar salsa (mild or spicy)
- guacamole *
- 1 container sour cream
- 1 brick New York sharp Cheddar cheese or Monterey Jack
- sliced or chopped large black pitted olives
- chopped scallions
- shredded lettuce (an option)

1. In deep dish pie or quiche pan, smear refried beans on bottom. Cover with salsa.
2. Plop guacamole mixture over this and smooth. Add sour cream on top, then cover generously with New York sharp Cheddar cheese.
3. Decorate the top with the black olives and chopped scallions.
4. Serve with a basket of restaurant-style corn tortilla chips for dunking into.
