Zucchini Casserole

- 4 to 5 medium zucchini, chopped
- 1 medium onion, chopped
- 1 (8 oz.) Monterey Jack cheese with jalapeno, chopped
- 3 eggs, beaten
- 1/3 c. Mazola oil
