1. Mix all of the ingredients in a saucepan and cook over low heat, stirring to soft ball (234°).
2. Then stir in an additional 1/2 cup cream.
3. Cook to thick, smooth consistency (228°).
4. Remove from heat.
5. Stir in 1/2 teaspoon vanilla.
6. Serve hot or cold. Makes 2 cups.
