Zucchini Nut Bread

Name: Zucchini Nut Bread
Ingredients: 3 eggs; 3 c. flour; 3 tsp. vanilla; 1 tsp. salt; 1 tsp. soda; 1 c. chopped nuts; 1/4 tsp. baking powder; 1 c. oil; 2 1/2 c. sugar; 1 tsp. cinnamon; 1 tsp. nutmeg; 2 peeled, grated zucchini (2 c.)

1 tsp. salt
1 tsp. soda
1 c. chopped nuts
1/4 tsp. baking powder
1 c. oil
2 1/2 c. sugar
1 tsp. cinnamon
1 tsp. nutmeg
2 peeled, grated zucchini (2 c.)

Instrucciones

1. Beat eggs, add oil, sugar, zucchini and vanilla. Mix well. Add remaining ingredients.

2. Mix until well blended.

3. Bake in greased loaf pans (makes 2) 1 hour at 325°. (Nuts optional.)
