Oatmeal-Applesauce Muffins

Ingredients
- 1/4 c. lite margarine
- 1/2 c. brown sugar
- 1 egg
- 1 1/2 c. flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1 c. uncooked oatmeal
- 3/4 c. applesauce
- 1/2 c. apple juice
Instructions
1. Beat margarine and sugar together until creamy.
2. Add egg and beat well.
3. Combine remaining dry ingredients.
4. Mix well.
5. Add to egg mixture.
6. Mix applesauce and apple juice.
7. Add to batter. Fill greased or paper-lined muffin cups 2/3 full.
8. Bake at 375° for 30 minutes or until muffins are lightly browned on top.
9. Makes 1 dozen yummy muffins.
