Apple And Pecan Bread Pudding
Ingredients
- 1 (8 oz.) pkg. cornbread stuffing mix
- 2 apples, peeled, cored and grated
- 1 c. chopped pecans
- 1 c. yellow raisins
- 2 tsp. pumpkin pie spice
- pinch of powdered cloves
- 2 eggs, beaten
- 1 c. apple cider
- 1/2 c. honey or sugar
- 2 Tbsp. melted butter

Instructions
1. In a bowl, toss together the first 6 ingredients until thoroughly mixed.
2. Beat together remaining ingredients and stir into fruit and nut mixture.
3. Place in a buttered 10-inch porcelain baking dish and bake in a 350° oven for 30 minutes or until top is beginning to brown.
4. Serves 8.
5. Good with chicken, turkey or pork.
