Broccoli Cornbread

- 1 box Jiffy corn muffin mix
- 4 eggs
- 3/4 c. cottage cheese
- 1 small onion, finely chopped
- 10 oz. broccoli, chopped
- 1 stick melted butter
- 1 tsp. salt

1. Mix cottage cheese and salt.
2. Add eggs.
3. Mix broccoli, onion and butter.
4. Then add cornmeal mix.
5. Beat until smooth.
6. Bake at 400° for 20 minutes or until golden brown.
